I recently read a repost on Instagram where someone asked if there was anyone who was planning to dress up for Halloween. One of the replies… “I’ve been wearing a mask and eating candy for 7 months… so no.” While we didn’t dress up for Halloween this year, we did put out a plate of candy on the front porch with a note for trick-or-treaters and watched last years remake of ‘The Addams Family’ while eating boo chips.
Earlier in the day we created fall cookie board that we’ve been stocking up cookies for over the past few weeks. It was full of fall flavors and spices that we know and love from this time of year, along with the most delicious pumpkin spice cake bites (from Fresh Market, a few fall candies, and the paisley embossed sugar cookies that we’d baked just that morning.
Creating a fall cookie board with the little in your life (in this case my niece Cecilia) is such a fun way to spend a weekend and I have to say that she was definitely a fan of the sugar cookies that she helped make.
Sugar Cookie Recipe
Ingredients —
- 1 cup powdered (aka confectioners) sugar
- 220g goat butter (soft, not frozen) — you can substitute regular butter
- 2 tsp vanilla bean paste
- 3 cups flower
- 1 egg
Directions —
Whisk together butter and powdered sugar. Add vanilla paste, egg. Add flour and mix until the dough is soft. allow the dough to chill your refrigerator for 30 minutes to an hour.
Preheat oven to 375 degrees. Roll out the cookies to a thickness of 1/4 inch on baking parchment (or flour surface) using a smooth rolling pin. If you’re us using an embossed rolling pin, dust the rolling pin with flour each time so the dough won’t stick to the rolling pin.
Cut out the cookies with your cookie cutters. Place the cookies on silpat or baking sheets lined with parchment paper. Place in the refrigerator for 10-15 minutes before placing in the oven.
Place one chilled baking sheet and cookies into preheated oven and bake for 8-10 minutes. Remove from oven before edges begin to brown.
Leave cookies to cool on your baking sheet for 10 minutes before enjoying.
