If I had to name the one ingredient that truly makes this salad divine, it would be the white peaches. The sweetness is the perfect balance with the tanginess of the vinaigrette, the shredded parmesan is a mild and satisfying addition.
While we’ve previously made this salad without pasta, we had these uniquely shaped pasta shells that were perfect for tossing with our vinaigrette.
Shrimp & White Peach Salad with Bibb Lettuce
Ingredients —
- 4 large shrimp (per person, de-veined, detailed)
- 2 white peaches (cut into wedges)
- 1 head of Bibb lettuce
- 1/2 bag of shell pasta
Directions —
Wash and roughly shred Bibb lettuce. Set aside.
Bring a pot of water to a boil.
Wash and cut peaches into wedges.
Rinse de-veined shrimp and remove tails. We used pre-cooked shrimp and simply heated the shrimp in a grill pan with 2 tbsp of olive oil just until warm.
Drain pasta and toss in pot with the Simple Champagne Whole Grain Mustard Vinaigrette.
Plate your Bibb lettuce, shrimp and peaches, pasta and top with shredded Parmesan cheese.
Simple Champagne Whole Grain Mustard Vinaigrette
Ingredients —
- 1-2 tbsp Champagne Vinegar
- 2-3 tbsp Olive Oil
- 2 tbsp whole grain mustard
- 1 tbsp honey (to taste) you can add more if the mixture is too tangy
Note: When I made this I didn’t use any measurements so you can feel free to add more or less of each ingredient.
Directions —
Add champagne vinegar, olive oil, and mustard and whisk together.
Add honey whisk in and taste… If your dressing is too thick just add more olive oil, or if you want it to have more ‘bite’ add more champagne vinegar, but remember a little goes a long way!
