Having a salad featuring crisp spinach, seasonal berries and creamy goat cheese is always a delicious way to break up a day. On Memorial Day we were off for the day, and while doing some work out in the yard, I found myself thinking about what would be nice to have for lunch. I’d picked up some fresh strawberries just a few days before, and we had a rather large tub of spinach just waiting to be enjoyed.
All I had to order was some delicious chicken from one of our favorite Greek restaurants, and add some of the Laura Chenel original goat cheese that I adore (it’s creamy without the ‘tang’ that can be found in most goat cheeses) and walnuts.
The salad is so quick and easy to put together, and it leaves you feeling satisfied knowing you went with a more healthy lunch, but it’s also hearty enough to not leave you feeling like you need something else to eat afterwards.
— Strawberry & Spinach Salad —
Ingredients —
- Fresh Spinach (washed)
- Strawberries (washed and sliced)
- Pulled Chicken (or grilled chicken fingers)
- Laura Chenel Original Goat Cheese
- Walnuts
Directions —
Wash spinach and strawberries throughly. Add spinach to bowls followed by sliced strawberries. Add chicken, goat cheese and top with walnuts. While this salad is quite delicious on it’s own, you can add a champagne or blackberry vinaigrette for a nice finish.
