When planning for any time where we are renting a home through VRBO, one of our perquisites when choosing a place to stay is the kitchen. Even before this year, we loved going to our destination, doing a little shopping at one of the local grocery store and planning at least 1-2 meals each day to enjoy at our home away from home.
This Mediterranean inspired board was months in the planning, and I was so happy that we found a local Greek restaurant (High Country Greek) in Boone, that was the perfect option for procuring a few of the much needed food items for our main board.

I first starting planning out the exact menu for this Mediterranean centered meal when we were on our way back from Charleston. I’d briefly considered just making this meal at home, but after I found the perfect platters from Amanda Lindroth (and I saw the pictures of the home we would be staying at during our time in Boone) I decided why not make all of the dishes I’d thought up while we were on vacation. It’s so much fun to pick a meal to prepare day of the trip, and this particular meal provided us with leftovers that lasted through the remainder of our trip.
We found the most perfect sunflowers at the local Harris Teeter.

This Spanakopita was EPIC! Seriously it would be worth a trip back to Boone right now just to get another slice. We divided ours up into quarters which tells you just how big the servings are.
For those of you (like ourselves) who are not completely familiar with all of the Greek dishes, I’ve included a little background.
Dolmades — wrapped grape leaves typically filled with an herb-y rice mixture
Spanakopita — spinach and cheese layered between layer upon layer of filo dough
Souvlaki — Pork Skewers marinated with spices
Tzatziki — It is made with yogurt mixed with cucumbers, garlic, salt, olive oil, and dill
