Sometimes a drink is so good you have to make it twice, along with a tasty appetizer. I previously the single-serving recipe for these Blackberry Jam Spritzers, and today I’m sharing the full recipe along with a very delicious appetizer featuring a herbed spreadable sheep’s cheese, Wickedly Woolly made from Lacaune sheep’s cheese in Jumilla (Murcia), Spain. I found this particular cheese at Ingles, but it can also be found at your local Whole Foods. This is my first time trying both a spreadable sheep’s cheese and also my first time tasting anything with the herb, chervil also known as French parsley. It’s so DELICIOUS!
The savory nature of the sheep’s cheese paired perfectly with the blackberry’s sweetness, and for a little extra touch, I added some of the peppermint flowers from our herb garden. They are edible and according to most herb growers, should be clipped to allow for the continued growth of your mint plants.
Crostini with Herbed Sheep Cheese, Blackberries & Mint Flowers
Ingredients —
- 1 French baguette (sliced)
- Wickedly Woolly Spreadable Goat Cheese with Chervil
- 1 container blackberries (rinsed)
- Mint flowers (optional for garnish, edible flowers will also work)
Directions —
Pre-heat oven to 350F. Slice baguette into even rounds. Place on a baking sheet. Once the oven is pre-heated bake for 5-8 minutes until rounds are crispy. Spread sheeps cheese and garnish with blackberry and mint flowers.
Blackberry Jam Spritzer
Ingredients —
- 1 bottle San Pellegrino Sparkling Water
- 5 tbsp. Blackberry Jam (or Blackberry Butter)
- Juice of 1/2 a lime
- Orange Mint (for garnish)
- Ice
Directions —
Add Blackberry Jam or Blackberry Butter, a bottle of chilled San Pellegrino Sparkling Water and the juice of half a lime. Pour over ice, garnish with mint and serve. (For an touch of sweetness, you can add a sugar rim around your glasses. Just add lime juice to the rim of your glass, place your sugar crystals in a plate and press the rim into the sugar until the rim is coated with sugar.)
