
Sometimes you just need a simple sandwich that is both easy to make and really hits the spot. While taking a study break this past weekend, I was going between ordering from DoorDash or making a sandwich. I knew that I had the perfect bread for a sandwich from our local bakery, BreadSmith. They have the most delicious English Muffin bread (in a loaf that you can have sliced, sandwich or Texas Toast style) on Saturday mornings, it’s also where I get my weekly loaf of Rustic Italian Bread and the pizza dough that we use to make our delicious homemade pizzas that I can enjoy (Goat Mozzarella really is the best!).
From today’s post, you can see what decision I made. I headed to my local Earthfare to pick up some of their chicken salad (which I love because it’s delicious and dairy-free). I sorted through the sprouts they had on hand, which were all the usual suspects, but I went for the alfalfa/radish sprout blend and a tub of ready-to-go Bibb lettuce. While you use any of your favorite lettuce varieties for this sandwich, I just went with my personal favorite.
