When we spend a weekend in, one of the things I like to do is create a little charcuterie board for two. It’s usually made up of whatever we currently have on hand. You’ll definitely recognize the meat selection (uncured Genoa salami from Boar’s Head and Prosciutto) as those are always the meats that we feature on our boards. When you find certain items that you love, its always a good idea to keep them on hand for impromptu boards.
While we have a wedge of Manchego in our cheese drawer (which is one of my favorite cheeses besides chèvre) the pre-sliced Manchego is so convenient for charcuterie boards. The kumquats were mostly for color with this particular board since we’d had them for a few weeks, but they still had a wonderful citrus aroma and the jam grapes are some of my favorites besides the champagne grapes that I’m OBSESSED with.
As far as crackers, I chose to go with a single selection for this board because it’s small and the crackers are Parmesan flavored. We’ve previously tried Paul and Pippa’s Vegan Artisanal Crackers with Basil and Olive Oil which work well with a spreadable chèvre, but I opted for the Vegetarian Artisanal Crackers with Parmesan Cheese since I’d only featured one cheese on this board. You typically include 2-3 cheeses.
