We are still very much in peach season here in the Carolinas, and after picking up a copy of Belinda Smith-Sullivan’s Just Peachy, I couldn’t wait to try out some of the recipes. Peaches have to be one of my absolute favorite summer fruits, and we like to keep fresh peaches on hand throughout the season and since we’ve recently gotten back into baking we decided why not try out the recipe for Peach Walnut Bread.
As a lover of bread (seriously is a breadatarian a thing?) after flipping through the book, I settled on the recipe for Peach Walnut Cake (which is actual more like the A-Z bread that we always made when I was growing up, and is actual a modified version of the authors banana bread recipe.) There were so many delicious recipes to try, but we decided to ease ourselves back into baking with this very easy to follow recipe.
Peach Walnut Loaf Bread
ingredients
- 1 1/2 cups all-purpose flour
- 1/2 tsp salt
- 1 tsp baking soda
- 1/2 tsp baking powder
- 6 tbsp unsalted butter, room temperature
- 1 cup sugar
- 2 large eggs
- 1 tsp lemon extract
- 1 cup peeled and finely diced peaches
- 3/4 cup chopped walnuts
directions
Preheat oven to 350 degrees F. Spray a standard loaf pan with non stick baking spray.
In a medium bowl, whisk together the flour, salt, baking soda, and baking powder.
In the bowl of a stand mixer, cream the butter until it is pale yellow. Add the sugar and continue beating until thoroughly mixed. Add egg, 1 at a time, beating well after each addition. Add the lemon extract. Add the flour mixture and continue beating until mixed. Fold in the peaches and walnuts.
Pour batter into the prepared loaf pan. Bake for 44 minutes, or until cake tester comes out clean. Cool in pan for 10 minutes; then turn onto a wire rack to cool completely.
Although we LOVED this bread, we’re definitely planning to make it with almond extract versus the lemon extract that was called for in the recipe. If you like a bit of citrus flavor in your bread, definitely add the lemon extract!
What’s the perfect thing to enjoy with this delicious bread? How about a nice glass of iced tea sweetened with Peach Simple Syrup. It couldn’t be easier to make, and I’ve included the recipe below.
Peach Simple Syrup
Ingredients
- 2 cups water
- 2 cups sugar
- 2 cups peeled and chopped peaches
- 1 tablespoon freshly squeezed lemon juice
Directions
Into a medium saucepan over medium-low heat, add the water, sugar, and peaches. Simmer, stirring occasionally, until peaches are tender, 15-20 minutes. Strain through a sieve, using the back of a wooden spoon to mash the peach juices through the sieve into the syrup. Discard the peach pulp. Stir the lemon juice into the syrup and pour into an airtight bottle and refrigerate. This mixture should keep for several weeks.
