If you need a quick salad to put together after work (or better yet, make it your go-to work salad) this Greek Salad is delicious and easy to make. You can keep it strictly vegetarian (leave off the salami), but I like the flavor profile that Genoa salami adds to a salad. Plus this salad is so fresh that you don’t need any dressing. We just used the olive oil from our marinated goat cheese!
Now on to our ‘croutons’. I’m sure you can see they aren’t your typical croutons, but they are even better! 34 Degrees recently debuted their gouda crackers aka Mates in three flavor profiles: original, rosemary garlic, and caramelized onion). We like to enjoy the original on their own, the rosemary garlic on a charcuterie board, and the caramelized onion are the perfect change up for a crouton on a salad.

Ingredients —
- Romaine Lettuce (rinsed and torn)
- Black Olives (sliced)
- Roma Tomatoes (sliced)
- Herb Goat Cheese (or Feta)
- Genoa Salami (halved)
- Caramelized Onion Mates (c/o 34 Degrees)
Directions —
Rinse and tear fresh romaine lettuce. Prepare other veggies, salami, and goat cheese (or feta) and add in the order desired. Top with Caramelized Onion Mates (or other flavors of Mates).
