Sharing the recipe for this cheesy deliciousness seemed like a good idea for a Friday. It’s so incredibly easy to make and we’re using the most delicious Asiago Stagionato PDO cheese that really makes this savory grilled cheese EPIC!
Asiago Stagionato is a semi-fat hard cheese with a nutty flavor that comes from Asiago, Italy. Asiago Stagionato has been aged for 2-4 months and is one of the more mild variations of Asiago along with Asiago Fresco that has only been aged for 20 days at most. Since the Asiago Stagionato is a semi-fat hard cheese it still has a soft texture and can be easily enjoyed as a table cheese along with apricots and cashews, it can also be melted on the most delicious grilled cheese sandwiches or grated over the top of a comforting bowl of fettuccine.
While you can make a sweet version of this sandwich by subbing the spinach and garlic mixture with sliced pears drizzled with honey. Oh, wow that sounds good… perhaps I’ll save that idea for a savory scone recipe that I’m working on for fall…
EPIC Savory Grilled Cheese Sandwiches
Ingredients —
- 1 container Baby Spinach
- 2 cups Asiago Stagionato PDO, grated
- 2 tbsp EVOO
- 1 tbsp garlic, minced
- 4 slices rustic Italian bread
Directions —
For spinach/cheese mixture: In a skillet, heat EVOO over medium-high heat. Add the minced garlic and cook until golden brown. Add spinach and good until the spinach is wilted and most of the moisture has cooked out. Remove from heat and stir in the grated Asiago Straginato PDO.
Assemble sandwiches: Place slices of buttered bread (butter side down) onto grill pan or panini press. Spread spinach mixture onto bread and top with the second slice of buttered bread, butter side up. Cook for 2-3 minutes per side or until golden brown.
