When you think of a summertime fruit, watermelon is definitely one of the first that comes to mind. It’s perfect for cooling down after being outside all day, or just simple enjoying as afternoon snack at work to keep your creative ‘juices’ flowing until it’s time to clock out for the day.
One of my favorite things to do when enjoying this nutrient rich melon (it’s made up of mostly water and contains both B6 and Potassium) is to top it off with feta (I go with a Sheep/Goat Feta versus a Cow’s Milk Feta due to allergies) and add some fresh mint from our garden. So it’s essentially a melon pizza…
For this snack you only need three ingredients:
- Watermelon (sliced or cubed)
- Feta Cheese (crumbled)
- Fresh Mint
If you don’t want to buy a whole watermelon, you can usually find watermelon slices or watermelon chunks on your local grocery store aisle, and while the watermelon chunks won’t have the look of a melon pizza, it will make a delicious watermelon salad!
The flavor combination of this summertime snack is the perfect balance with the sweetness of the watermelon mixing with the saltiness of the feta cheese.
