I discovered my love of sheep’s cheese last year when we started making cheeseboards, and I was so excited to be introduced to 3Pecorini which includes three different sheep cheese options, Pecorino Romano P.D.O., Pecorino Sardo P.D.O., and Fiore Sardo P.D.O. All of the cheeses from 3Pecorini are produced almost exclusively in Sardinia made from the highest quality Sarda sheep’s milk.

Fiore Sardo P.D.O.
About
This cheese is considered THE cheese amongst Sardinian sheep farmers and is considered one of Sardinia’s defining agricultural products. The first varieties of Fiore Sardo were produced in the Bronze Age. It’s made from raw milk and local milk enzymes as well as lamb or kid rennet that is often handcrafted by the shepherd. It’s these aspects that give Fiore Sardo its unique flavor. The younger variety makes a delicious addition to cheeseboards and the more mature variety can be enjoyed grated over pasta dishes.

Both of these cheeses are considered table cheese, and along with Fiore Sardo, Pecorino Sardo is also considered to be one of Sardinia’s oldest cheeses. Both of these cheeses pair well with bread, pasta, honey, and fruit (especially pears), nuts, vegetables (for a soft sweet finish), and cured meats.
If you’re thinking of adding it to a dish, it pairs quite well with an antipasto, baked pasta dishes, veggie soups, frittatas and quiches, and salad. If you’re planning to enjoy it on its own, pears, sweet grapes, and dried nuts make the ideal accompaniment.

We featured our Pecorino Sardo Dolce on our cheeseboard (along with the Pecorino Romano) and our Pecorino Sardo Maturo made the perfect finishing touch on our Pear and Bibb Lettuce Salad with walnuts and a drizzle of Pear Balsamic.

About
While Pecorino Romano’s origins begin in Rome, Sardinia is now the main hub for the production of this particular sheep’s cheese. This hard cheese which is ideal for grating on all of your favorite dishes is made from 100% fresh full-fat sheep’s milk 95% which comes from Sardia sheep. The cheese features a thin ivory or straw-yellow crust and is slightly sharp when enjoyed as a table cheese and has a more intense flavor when grated.
