Eight + Sand is the newest concept restaurant to open up in the Charlotte area. Helmed by the visionaries behind one of the most popular coffee shops in Charlotte, James and Miracle Yoder of Not Just Coffee and Grant Arons of Inizio Pizza, this new eatery offers a artisan bakery where every loaf of bread is baked fresh daily, a restaurant and cafe/bar all rolled into one. Located on the ground floor of the Bradham Apartment building, you can enjoy your meal with a view of the Light rail.
Many aspects of Eight + Sand from the name itself to the branding for the restaurant, pay homage to not only Charlotte’s light rail, but also to the railroad era. “Eight + Sands” is an old railroad phrase often used to bid a safe journey to train crews and even the blue in the signage outside (designed by Rachel Martin Designs) nods to the blue denim uniforms worn by train crews.
When we arrived at Eight + Sand during the Saturday lunch rush, the line was already out the door, so we knew that it had to be worth waiting for. Shelves with potted plants that trail around vases, books and knickknacks are interspersed between the tables in the main dining area which can hold 78 with an additional 60 that can be seated outside.
If you’re not sure what to order, there is plenty of time to peruse the menu while you wait, just grab one of the paper menus at the door, or peruse the larger menus posted both outside and on the shelving closest to the register.
While most of the sweet treats were sold out on our visit, I’m looking forward to returning again and trying one of delicious desserts created by Christa Smith who heads up the bakery.
Panko Chicken Sandwich
After taking a moment to decide between the Panko Chicken Sandwich and the Asian Chicken Salad, I opted for the sandwich, knowing that I would definitely be return again soon for the salad.

My thoughts on our first visit… I was impressed. The food was delicious, I loved the open Scandinavian feel of the restaurant. I’m looking forward to returning, perhaps to try out that salad, grab a bakery treat, and an oat milk latte!
