I’ve had berries and cake on my mind for weeks, but when shopping for essentials I kept forgetting to buy the cake mix. I know, I could have made the cake from scratch (as we always have essentials like flour, sugar, eggs and margarine/goats butter on hand at all times), but I wanted to go the cake mix route with this one. However, if you’d prefer to make your cake from scratch, I highly recommend this Basic Vanilla Cake Recipe from Food Network Kitchen.
In addition to our cake mix, we also picked up the Betty Crocker Rich & Creamy Vanilla Frosting (which is dairy free by the way) and instead of frosting the entire top of the cake, we opted to just add one row of dollops around the inner rim.
Since I’m not someone who is really into sweets, I have to say that what I was looking forward to the most with our little spring berry cake was the berries. We used a few of our favorite Driscoll berries (raspberries and blackberries) and topped it off with a sliced strawberry and a final dusting of powdered sugar for a more finished look.
Here’s what you’ll need to recreate this simple and delicious spring berry cake…
Ingredients
1 box Betty Crocker Favorites Super Moist Cake Mix — Yellow (or whip up the Basic Vanilla Cake Recipe)
1 Betty Crocker Rich & Creamy Vanilla Frosting
Assortment of berries (strawberries, raspberries, blackberries etc)
Powdered Sugar
Tools
9 inch cake pan (we ended up using a 9 inch flan pan)
Piping bag/tip
Instructions/Recommendations
I recommend making your cake and letting it cool first, either for a few hours or overnight before adding your frosting/berries, because you don’t want your frosting to melt into puddles before you serve it. If you really love your frosting and want to give your berries something to ‘stick’ to, you can always just frost the top of your cake, leaving a ‘naked’ rim around the edge cake or frost the entire top of the cake.
For our berries, we went with an every other berry look for the initial ‘layer’ of berries closest to the pipped frosting and then in the middle we just placed a handful of berries before topping it with a sliced strawberry and powdered sugar.
