One of the most refreshing fruits of the summer season, in my opinion, is watermelon. We love enjoying it on its own, on salads, as a side for our chicken goat mozzarella burgers, or in a refreshing summer drink. I thought up this particular drink on the way home from work one day. My car was well over 100 degrees inside when I first got in it to drive home, and it took nearly half the drive home to get it cooled down to a manageable level, so obviously, to get my mind off things I decided to start thinking about what drink I’d like to add to my spring/summer drink series.
Something with watermelon… was the first thing I thought of, and then my thoughts turned to the overabundance of mint we have growing in our herb garden. This year despite the heat it’s really taken off. We have three varieties of mint in total; peppermint (versus our usual sweet mint), orange mint, and chocolate mint. Since our peppermint plants have started to flower (I never knew that peppermint flowered before, but now I do).
After planning out my drink, my mind turned to glassware. While we have a variety of bee-inspired glasses, I have been thinking about getting a few different style classes in sets of two or three for the special drinks that we create throughout this season. I currently use my bar cart as a side table in my writing studio, and I found three styles of glasses on CB2 that were exactly what I was looking for along with these stirring spoons are both functional and work for styling purposes and cocktail picks for when I want to style my drink garnishes somewhere other than on the rim of my drink glass.
Watermelon Mint Refresher
Ingredients —
- 3 cups cubed watermelon + more for garnish
- 1 bottle chilled San Pellegrino
- Mint leaves (for garnish)
Directions —
Emulsify or blend watermelon. Fill glasses halfway with the watermelon mixture, add ice and then top with chilled San Pellegrino Sparkling Water. Add garnish of fresh mint and watermelon cubes. Enjoy!
